The Production of Dried Menma - Soaking

  Because of the fermentation process, the dried bamboo shoot (Machiku) has special flavor and soft texture. Furthermore, by the drying process, the components from the fermentation process will be condensed. Use this kind of dried bamboo shoot (Machiku) as the raw material, the Menma produced by our Chinese factory become one of the basic materials for further Menma products.

(1)Boil the dried Menma in 85-90℃ hot water for 3 hours.

(2)Change the water, boil in 80-85℃ hot water for 4 hours.

(3)Change the water again, keep the water at 80℃ and soak for 15 hours

Change the water again, keep the water at 80℃

(4)Drop the water. The Menma is well soaked.
